Preparation

  • In a small bowl, combine softened cream cheese with half the sugar, half the cinnamon, and vanilla. Mix until smooth and set aside.
  • Wash and slice strawberries into thin pieces and keep them nearby.

Cooking

  • Spread the cream cheese mixture evenly over one side of the tortilla.
  • Melt butter in a non-stick skillet over medium heat.
  • Sprinkle remaining sugar and cinnamon into the pan. Place the tortilla cream cheese side up into the skillet.
  • Arrange sliced strawberries on top of the cream cheese layer while cooking.
  • Check the bottom of the tortilla; when the sugar turns light brown, remove it from heat.

Serving

  • Fold the quesadilla in half, drizzle with honey if desired, and enjoy warm.
