Frosting Base

  • 3 oz strawberry gelatin powder bright, fruity, and bursting with strawberry flavor
  • 3 tbsp powdered sugar sweet and silky, adding just the right amount of sweetness
  • ΒΌ cup milk creamy and rich, providing the perfect consistency for your frosting
  • 1 tsp vanilla extract aromatic and comforting, enhancing overall flavor
  • 16 oz Cool Whip (2 containers) fully thawed, light and fluffy, making the frosting airy and delightful

Preparation

  • In a large bowl, add the strawberry gelatin powder, powdered sugar, milk, and vanilla extract.
  • Using a hand mixer or stand mixer on medium-high speed, beat for about a minute and a half until slightly thickened.
  • Place the bowl in the fridge for about an hour to cool and set up a bit.
  • Take the mixture out of the fridge and fold in one tub of Cool Whip, mixing until mostly blended.
  • Add the second tub of Cool Whip and mix until well combined, ensuring no streaks remain.

Chilling

  • You can use the frosting immediately or cover it and keep it in the fridge until needed.
  • If you plan to pipe it onto cupcakes, chill it for at least another hour.

Notes

Ensure your Cool Whip is fully thawed for the best consistency. Consider adding fresh strawberry puree for enhanced flavor. Mix gently to keep the frosting fluffy.
