  • 1/4 teaspoon cream of tartar Stabilizes egg whites.
  • 1/2 cup white chocolate chips Adds sweet contrast.
  • 1/2 cup milk chocolate chips Enhances overall chocolate experience.

For the whipped topping

  • 1 cup heavy cream Brings luscious creaminess.
  • 1/4 cup powdered sugar Sweetens and stabilizes the whipped cream.
  • 1 teaspoon vanilla extract Adds warmth to the flavor.

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a heatproof bowl, melt the semisweet chocolate chips and butter together until smooth.
  • In a small bowl, dissolve the coffee granules in water and add to the chocolate mixture along with granulated sugar. Stir until combined.
  • Whisk in the egg yolks one at a time until well combined.
  • In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form.
  • Gently fold the egg whites into the chocolate mixture until no white streaks remain.

Baking

  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until set but still slightly wobbling in the center.
  • Allow the cake to cool completely in the pan before removing the sides.

Topping

  • In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  • Spread the whipped cream over the cooled cake and refrigerate for at least 2 hours.
  • Melt the white and milk chocolate chips in separate heatproof bowls and let cool slightly before drizzling over the cake.
  • Refrigerate the cake for another 30 minutes to set the chocolate drizzle.
