Spices and Seasonings

Thickening Ingredients

  • 2 tablespoons cornstarch Used to thicken the stew.

Instructions
 

Preparation

  • Rinse the dried green lentils under cold water and drain them.
  • In a large pot, heat olive oil over medium heat until shimmering.

Cooking

  • Add the diced onion and minced garlic, sauté for 2-3 minutes until softened.
  • Stir in the sliced mushrooms and cook for another 5 minutes.
  • Add the dried thyme, paprika, salt, and black pepper, stir to combine.
  • Pour in the vegetable broth and add the rinsed lentils.
  • Bring the stew to a boil, then reduce heat to low and simmer for 25-30 minutes until the lentils are tender.
  • In a small bowl, mix soy sauce and tomato paste, then stir it into the stew.
  • In another small bowl, whisk together cornstarch and water until smooth, then slowly pour into the stew.
  • Let it simmer for an additional 5-10 minutes until it reaches your desired consistency.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley.

Notes

Serve with crusty bread or over rice/quinoa for meal-prepping. Adjust seasonings and consider adding coconut milk for creaminess.
