Base Ingredients

  • 3 cups uncooked instant brown rice Cooks up fluffy and heart-healthy.

  • 10 ounces frozen broccoli florets Provides color and nutrition.
  • 10 ounces frozen peas Adds sweetness and nutrients.

Creamy Sauce

  • 2 cans cream of mushroom soup (10.5 ounces each) Essential for creaminess.
  • 0.75 cups chopped fresh parsley Adds fresh brightness.

Cheese

  • 2.5 cups freshly grated Parmesan cheese, divided Provides savory depth.
  • 2 cups freshly grated sharp cheddar cheese, divided Delivers gooey, melty perfection.

Instructions
 

Preparation

  • Measure 3 cups of dry instant brown rice and cook it following the directions on the package, then set aside.
  • In a large skillet or Dutch oven, add diced onions, minced garlic, carrots, olive oil, salt, and pepper. Cook over medium-high heat, stirring occasionally, for about 10 to 15 minutes until the carrots are tender and onions are translucent.
  • Add frozen peas, frozen broccoli, both cans of cream of mushroom soup, 1½ cups of Parmesan, and 1 cup of cheddar cheese. Stir over medium heat until heated through, about 10 to 12 minutes.
  • Stir in the cooked rice and chopped parsley until well combined.
  • Grease a 9 by 13 inch casserole dish, then spread the veggie and rice mixture evenly in it.

Baking

  • Sprinkle the remaining 1 cup of Parmesan and 1 cup of cheddar cheese over the top of the casserole.
  • Bake in a preheated 400-degree oven for 10 to 15 minutes until the cheese is bubbly and golden brown.
  • Allow to cool for a few minutes before serving.

Notes

Serve as a main dish or at potlucks. For best results, do not rush the melting process in the oven. Ensure to grease the casserole dish to prevent sticking.
