Preparation

  • Rinse and drain the canned chickpeas thoroughly and set aside.
  • Slice the avocado in half, remove the pit, and scoop out the flesh. Cut it into bite-sized pieces and place in a large mixing bowl.
  • Halve the cherry tomatoes and add them to the bowl with the avocado.
  • Chop the cucumber into small cubes and add to the salad mixture.
  • Finely chop the red onion and mix it gently with the other ingredients.
  • Add the rinsed chickpeas, crumbled feta cheese, and chopped parsley to the bowl.
  • In a small bowl, whisk together the olive oil and lemon juice, then season with salt and black pepper.
  • Pour the dressing over the salad mixture and gently toss to coat all ingredients.
  • Taste and adjust seasoning if needed.
  • Serve in individual bowls or on a platter, garnished with parsley.

Notes

Use ripe but firm avocados to prevent mushiness. Rinse chickpeas thoroughly to avoid excess sodium. Adjust lemon juice for desired tanginess. Add avocado before serving if preparing in advance.
