Preparation

  • Heat olive oil in a large pot over medium-high heat.
  • Add the chicken breasts to the pot and cook until browned on all sides, about 5-7 minutes.
  • Remove the chicken from the pot and set aside, keeping the drippings in the pot.
  • Add the chopped onion to the pot and cook until translucent, around 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Pour in the chicken broth and scrape up any browned bits at the bottom of the pot.
  • Cut the cooked chicken into bite-sized pieces and return it to the pot along with the white beans, diced green chilies, cumin, oregano, chili powder, salt, and pepper.
  • Stir everything together and bring to a gentle simmer.
  • Reduce heat to low and let it simmer for 30 minutes, stirring occasionally.
  • Stir in the sour cream, heavy cream, and chopped cilantro, allowing to simmer for an additional 10 minutes.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot, garnished with more cilantro or shredded cheese.

Notes

Make sure to taste frequently and adjust seasoning. Consider browning the chicken longer for more flavor and don't skip the olive oil to prevent sticking.
