For the Whipped Topping

  • 2 cups heavy whipping cream Used for the whipped topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream the butter and sugar using an electric mixer until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • Mix in the vanilla extract until fully incorporated.
  • In a separate bowl, combine the milk and sour cream, stirring until smooth.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk mixture.
  • Fold in the melted white chocolate until incorporated.
  • Divide the batter evenly between the prepared pans.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Cool cakes in the pans for 10 minutes before transferring to a wire rack.

Assembly

  • Mash the fresh raspberries and mix with raspberry jam.
  • Beat together heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Place one cake layer on a serving platter and spread half of the raspberry filling on top.
  • Top with a layer of whipped cream.
  • Place the second cake layer on top and spread remaining whipped cream over the cake.
  • Garnish with fresh raspberries.
  • Chill the cake for at least 1 hour before serving.

Notes

Ensure all ingredients are at room temperature for best results. Do not skip cooling time to prevent melting the whipped cream.
