Instructions
 

Preparation

  • Start by thawing the frozen raspberries in the refrigerator overnight or at room temperature for a few hours.
  • In a saucepan, combine the thawed raspberries, sugar, and 1/4 cup of water. Cook over medium heat, stirring occasionally until the raspberries break down and the mixture begins to simmer.
  • In a small bowl, mix the cornstarch with 1/4 cup of cold water until smooth. Slowly pour the cornstarch mixture into the raspberry mixture, stirring constantly until thickened.
  • Continue to cook until the raspberry mixture thickens, about 2-3 minutes, then remove from heat and let it cool.
  • In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  • Melt the white chocolate in a heatproof bowl set over simmering water until smooth and glossy.
  • Gently fold the melted white chocolate into the whipped cream to create a mousse.

Assembly

  • Layer half of the pound cake cubes at the bottom of a trifle dish or serving bowl.
  • Spread half of the white chocolate mousse over the pound cake.
  • Pour half of the raspberry sauce over the mousse, then repeat layers with remaining ingredients.
  • Cover and refrigerate for at least 2 hours or overnight.
